This was the second Thanksgiving that my husband and I hosted for our family, and it has become one of my favorite traditions to kick-off the holiday season. Quinoa protein muffins

We’ve been experimenting in the kitchen this weekend and today took on one of my favorite vices: muffins ? Here is a healthy, protein packed recipe that will keep you craving these muffins year round! Note – Each muffin has 11 grams of protein!  *Recipe makes 6 muffins 1 Cup of Quinoa Flour 1 Cup of Almond Milk 2 Scoops of Chocolate Plant Protein  1 TBSP Baking Powder  1 Egg 1 TBSP Pumpkin Spice 1 TBSP Coconut Oil 1 TBSP Vanilla extract Icing: Mix cashew butter in a small bowl with a TSP of 100% maple syrup and a TSP of almond milk. Experiment to get desired texture. Mix all ingredients in a large bowl until batter is smooth. Scoop into muffin tray and cook at 350 degrees for 30 minutes. Super easy recipe that delivers healthy fall muffins??   

Go Clean

Here are a few of my favorite food items that get me through each day. I try to live the healthiest life I can, which boils down to eating clean. For over five years I have eliminated red meat, pork and turkey from my diet. I stay away from processed foods and sugary products (such as sodas, artificially sweetened drinks, high fructose corn syrup foods, etc). Instead I eat a diet loaded with fruits, veggies, lean protein (lots of chicken and seafood) and free of dairy (almond milk all the way!)?
