We’ve been experimenting in the kitchen this weekend and today took on one of my favorite vices: muffins ? Here is a healthy, protein packed recipe that will keep you craving these muffins year round! Note – Each muffin has 11 grams of protein!
*Recipe makes 6 muffins
1 Cup of Quinoa Flour
1 Cup of Almond Milk
2 Scoops of Chocolate Plant Protein
1 TBSP Baking Powder
1 TBSP Pumpkin Spice
1 TBSP Coconut Oil
1 TBSP Vanilla extract
Icing: Mix cashew butter in a small bowl with a TSP of 100% maple syrup and a TSP of almond milk. Experiment to get desired texture.
Mix all ingredients in a large bowl until batter is smooth. Scoop into muffin tray and cook at 350 degrees for 30 minutes. Super easy recipe that delivers healthy fall muffins??
